Cá thu làm sạch dùng khăn thấm khô nước. Cắt nhỏ phần đầu hành lá, phần lá tướt sợi. Thì là và ớt cắt nhỏ.
Đun nóng 50ml dầu ăn trong chảo chống dính, cho cá vào chiên sơ cho vàng đều 2 mặt rồi cho ra đĩa.
Vẫn trong chảo chiên cá, cho tỏi băm, ớt và đầu hành vào phi thơm rồi cho me và 100ml nước lọc vào. Thêm 2 muỗng cà phê đường, 2 muỗng cà phê nước mắm và 1/2 muỗng cà phê tiêu vào đun sôi. Cho cá trở lại chảo, lật cá vài lần cho thấm đều nước sốt. Đun lửa nhỏ đến khi nước sệt lại thì cho thì là và sợi hành lá vào đảo đều rồi tắt bếp.
